摘要

目的系统梳理番茄采后保鲜技术的研究现状与发展趋势,为番茄采后品质管控与全链条保鲜工程应用提供理论参考。方法以国内外近年来发表的相关文献为依据,从番茄贮藏品质变化特征及其生理基础和各类保鲜技术2个层面进行综合分析,重点阐述各类保鲜技术的作用机制、应用效果及联合保鲜策略。结论番茄贮藏品质劣变受贮藏温度、膜脂相变、活性氧爆发等多因素影响,失重、软化、冷害与病害是4条关键劣变途径。气调包装是成熟度较高的保鲜技术之一,精油乳液活性纸、壳聚糖抗菌包装等新型活性包装、可食性膜及采前化学处理、物理保鲜与基因工程改良等技术均可从不同维度有效延缓品质劣变。但每类技术均存在固有瓶颈,单一保鲜技术难以满足番茄长距离流通与长期贮藏的综合需求,多技术协同的联合保鲜及融合智能包装的数据驱动精准保鲜体系将成为未来产业化应用的核心方向。

Abstract

The work aims to systematically review the current research status and development trends of postharvest preservation technologies for tomatoes, so as to provide a theoretical reference for whole-chain preservation engineering applications. Based on relevant literature published at home and abroad in recent years, comprehensive analysis was conducted on tomato storage quality changes with their physiological basis and various preservation technologies, with the focus on elaborating the mechanism of action, application effects and combined preservation strategies of various preservation technologies. In conclusion, the deterioration of tomato storage quality is influenced by storage temperature, membrane lipid phase transition, ROS burst and other factors. Weight loss, softening, chilling injury and pathogen infection are the four key deterioration pathways. Modified atmosphere packaging is one of the most mature preservation technologies, while novel active packaging (such as essential oil lotion active paper and chitosan antibacterial packaging), edible films, pre-harvest treatments, physical preservation and genetic engineering can retard quality deterioration from different dimensions. However, each type of technology has its inherent bottlenecks, and a single preservation technology is difficult to meet the comprehensive demands of long-distance circulation and long-term storage of tomatoes. Therefore, a data-driven precise preservation system featuring multi-technology collaborative joint preservation and integrated intelligent packaging will be the core direction for future industrial applications.
