摘要

目的 研究常温下小茴香保鲜方法。方法 利用激光打孔工艺制备不同微孔密度的聚乙烯保鲜袋,筛选适宜小茴香保鲜的微孔气调保鲜袋(Modified atmosphere packaging,MAP),以普通大孔保鲜袋作为对照,比较具有乙烯吸附功能的气调保鲜袋(MAPE)与不加入乙烯吸附粉剂的保鲜袋(MAPN)对小茴香的外观、失水、硬度、可滴定酸含量、维生素含量等品质的影响。结果 MAP建立的相对湿度(RH)90%⁓92%、CO2体积分数为0.6%⁓0.8%的气氛环境适宜小茴香常温保鲜,与对照相比,自制的MAPE及MAPN保鲜袋均具有一定的保鲜效果,MAPE可以实现小茴香在常温(20 ℃)下货架期达到3 d,外观品质劣变不明显,营养成分损失得到显著抑制。结论 MAPE可以满足对小茴香的常温保鲜需求。

Abstract

The work aims to study the preservation method of fennel at room temperature. Polyethylene modified atmosphere packaging (MAP) with different number of micropores per unit area were prepared through a Laser drilling process. The preservation effects of MAP with or without ethylene adsorption function (MAPE or MAPN) on the appearance, water loss, hardness, organic acid, vitamin and other qualities of fennel were evaluated and compared with the ordinary large-hole bag of the control group. The results showed that, the atmosphere established by MAP with a relative humidity (RH) of 90%-92% and a CO2 concentration of 0.6%-0.8% was suitable for the room temperature preservation of fennel. Compared with the control, the self-made MAPE and MAPN fresh-keeping bags had certain fresh-keeping effect. MAPE could achieve a shelf life of 3 days at room temperature (20 ℃) with no obvious deterioration in appearance and quality, and significant inhibition nutrient loss of fennel. Therefore, modified atmosphere packaging with ethylene adsorption function (MAPE) can meet the room-temperature preservation requirements for fennel.
