摘要

目的 将大蒜素制成微胶囊,并进一步将其添加在薄膜中。以期制作出一种具备抗菌、抗氧化功能的水溶性可食膜。方法 微胶囊按经响应面优化后的工艺制备,然后添加在海藻酸钠、明胶混合的成膜基质中,流延成膜,然后测量其指标。结果 大蒜素微胶囊膜具备良好的力学性能,抗拉强度为(26.33±2.41)MPa,断裂伸长率为(21.96±5.26)%。根据光谱以及微观指标结果,确认薄膜中存在大蒜素微胶囊。薄膜具有缓释性,在4 ℃下贮藏8 d后,大蒜素含量最多还剩余最初的46.57%。大蒜素微胶囊薄膜DPPH自由基清除率最高达43.03%,ABTS自由基清除率最高为54.55%;对大肠杆菌、金黄色葡萄球菌、假单胞菌均有抑制作用。结论 本研究制备的大蒜素微胶囊膜可作为传统石油基塑料薄膜的良好替代品,为未来绿色安全可降解的活性包装提供了创新思路及科学参考。

Abstract

The work aims to prepare allicin into microcapsules and further add them to films so as to produce water-soluble edible films with antibacterial and antioxidant functions. The microcapsules were prepared according to the process after response surface optimization and were then added to the film-forming matrix composed of sodium alginate and gelatin. The film was cast and then its indicators were measured. The garlicin microcapsule film exhibited excellent mechanical properties, with a tensile strength of (26.33±2.41)MPa and an elongation at break of (21.96±5.26)%. Based on the results of the spectrum and microscopic indicators, it was confirmed that allicin microcapsules existed in the film. The film had sustained-release properties. After being stored at 4 ℃ for 8 days, the allicin remained at a maximum of 46.57% of the initial content. The DPPH free radical scavenging rate of the allicin microcapsule film was up to 43.03%, and the ABTS free radical scavenging rate was up to 54.55%. It inhibited Escherichia coli, Staphylococcus aureus, and Pseudomonas aeruginosa. The allicin microcapsule film prepared in this study can be used as a good substitute for traditional petroleum-based plastic films, providing innovative ideas and scientific references for future green, safe, and degradable active packaging.
