Abstract

In order to extend the shelf life and reduce rot of Agaricus bisporus, vacuum cooling and storage experiment for Agaricus bisporus were studied. Our results found that the loss weight rate and hardness of Agaricus bisporus by vacuum pre-cooling were better than that of the control groups during storage. Especially when the 1 kPa vacuum pre-cooling treatment was applied, resulting the minimum loss of the weight and hardness of Agaricus bisporus. With the decrease of cooling temperature, the decreasing of weight and hardness of Agaricus bisporus were reduced. With the 5 ℃ vacuum cooling treatment, the hardness, color and weight loss of Agaricus bisporus changes were the smallest. The quality of Agaricus bisporus with pre-treatment of vacuum pre-cooling is better than the control group during storage period. Vacuum pre-cooling technology can effectively extend the storage period of Agaricus bisporus.
