Optimization of Electrospray Coating Process of Tea Powder·CMC·SiO₂ and Preservation of Eggs

Abstract

The work aims to prepare a composite membrane using CMC, nano-SiO₂, glycerol, and tea powder, and to study its preservative effect on eggs, so as to delay the quality deterioration of eggs during storage. The optimal particle size of nano-SiO₂ was determined based on the membrane's light transmittance, tensile strength, and elongation at break. Single-factor experiments (nano-SiO₂ addition amount, CMC addition amount, glycerol addition amount, tea powder addition amount) were conducted to identify the optimal levels for each factor. Response surface methodology was then applied with tensile strength, elongation at break, and light transmittance as response values. The optimized membrane was subsequently used for egg preservation to evaluate its effectiveness. The results showed that the optimal conditions were: nano-SiO₂ particle size of 30 nm, nano-SiO₂ addition amount of 0.3 g, CMC addition amount of 1.5 g, glycerol addition amount of 3 mL, and tea powder addition amount of 1 g. When applied to egg preservation, the shelf life was notably extended over the 16-day period. The composite membrane significantly mitigated the increase in weight loss rate, the decline in Haugh unit, and the expansion of air cell diameter, demonstrating its excellent potential in extending the shelf life of eggs.
