Abstract
The work aims to develop a color indicator label that can visually and non-destructively test the freshness of mutton so that consumers can determine the freshness of mutton more intuitively and accurately. In this study, an electrostatic spinning technique was used to prepare a color indicator label (PLA/Ac) with polylactic acid as the base material and rose anthocyanin as the indicator. The PLA/Ac, color indicator label, was characterized by scanning electron microscopy (SEM), Fourier infrared spectroscopy (FTIR), ammonia sensitivity, humidity stability, temperature stability, and reproducibility. The PLA/Ac color indicator label, was verified for the detection of freshness in mutton. Characterization results showed that PLA/Ac color indicator label had a uniformly distributed spindle structure with an average fiber diameter of 541.96 nm and was successfully loaded with rose anthocyanins. In addition, the PLA/Ac color indicator label had good ammonia sensitivity, humidity stability, temperature stability, and reproducibility. The application results showed that the aroma profile of mutton changed during storage at 25 °C, with sourness gradually decreasing, bitterness increasing, and salty and fresh flavors increasing and then decreasing. After the mutton was stored at 25 °C for 48 hours, the total volatile saline nitrogen value and total colony count exceeded the standard. At this time, the color of the PLA/Ac color indicator label changed from pink to gray. The PLA/Ac color indicator label has a good potential for application in the field of visualization and non-destructive testing of mutton freshness, which has a positive effect on safeguarding consumer health and promoting the development of the industry.
