Abstract

The work aims to analyze and study the application of packaging based on metal-organic framework (MOF) from the perspective of fruit and vegetable preservation and point out that MOF-based materials have excellent performance in adsorption/desorption of ethylene, oxygen and other gases and antibacterial, hygroscopic and sensing aspects. The application of MOF-based materials in active preservation packaging of fruits and vegetables was summarized. Firstly, the development process of MOF-based materials in the packaging industry was expounded, and the application of MOF-based materials in fruit and vegetable preservation packaging was summarized, and finally the future development of MOF-based materials in fruit and vegetable preservation packaging and the problems in application were prospected. MOF-based materials had excellent adsorption/desorption characteristics in fruit and vegetable packaging, which could effectively inhibit the formation of microorganisms in the packaging, obtain the performance required for water absorption and enrichment through geometric and chemical modifications, and could also be used to quickly detect bacteria in the packaging, and realize remote wireless monitoring of fruits and vegetables in the supply chain. MOF-based materials can be used to encapsulate or release ethylene, oxygen and other gases in fruit and vegetable preservation packaging, as antibacterial and hygroscopic agents and sensor, which has potential in fruit and vegetable preservation packaging, but further research on the application safety of MOF materials in food packaging is still needed in the future.
