Abstract

This paper aims to explore the storage quality and physiological characteristics of postharvest Cichorium intybus L. var. foliosum Hegi. under the different temperatures, and establish its shelf life prediction model. In this experiment, shelf temperatures of 1, 4, 10 and 20 ℃ were set to compare and analyze the changing conditions of the sensory quality, respiration rate, ethylene release, chlorophyll content, carotenoid content, total phenol content, and color difference value of Cichorium intybus L. var. foliosum Hegi.. The quality loss rate and leaf color difference L values were used as characteristic indexes, and the Arrhenius equation and chemical kinetic equation were applied to establish the kinetic model of the shelf life of Cichorium intybus L. var. foliosum Hegi.. The results showed that compared with the experimental groups at 10 and 20 ℃, low-temperature storage at 1 and 4 ℃ could significantly delay the quality deterioration of the Cichorium intybus L. var. foliosum Hegi., and decrease the rate of descent of chlorophyll, carotenoid, and total phenol (P<0.05). Low-temperature storage at 1 ℃ can better inhibit the increase of respiratory rate and ethylene release rate, delay the occurrence of the respiratory peak, and prolong the shelf life significantly. The average relative errors of the prediction models were all within ±5%, which could be used to accurately predict the shelf life of Cichorium intybus L. var. foliosum Hegi.. This experiment provides a reference for the selection of postharvest storage temperature conditions and shelf life monitoring of Cichorium intybus L. var. foliosum Hegi..
