Effect of High Barrier HDPE Packaging on the Quality and Shelf Life of NFC Orange Juice

Abstract

The effect of high barrier high-density polyethylene (HDPE) packaging on the quality and shelf life of NFC orange juice was studied to provide information and reference for juice processing companies. Pasteurization was used to sterilize the not-from-concentrate (NFC) orange juice. The changes of various indicators of NFC orange juice were studied using samples in high barrier HDPE, regular HDPE and PET bottles stored at 4, 25, 37 ℃. The kinetic models of the quality change of NFC orange juice were established. The Arrhenius equation was utilized to predict the shelf life of NFC orange juice using the ascorbic acid content and overall acceptance as indicators. Among the three packages used, NFC orange juice packed in high barrier HDPE bottles showed less browning with less ascorbic acid and carotene content loss and higher preference. Taking the ascorbic acid content loss of 50% as the standard, the shelf life of NFC orange juice in high barrier HDPE packages at 4, 25, 37 ℃ were determined to be 152, 55, 31 d, respectively. Taking the overall acceptability of 5 as the standard, the shelf life of NFC orange juice in high barrier HDPE packages at 4, 25, 37 ℃ was 183, 44, 21 d, respectively. Therefore, high barrier HDPE packages could effectively extend the shelf life of the NFC orange juice and improve its quality during storage; hence, it has great potential for applications in NFC juice.
