Application of Cool-Storage Agent in Grape Simulation Logistics

Abstract

This paper aims to study the effect of cool-storage agent applied to grape simulated logistics using the micro-environment modified atmosphere packagings as the carrier. Taking the Shine-Muscat grape as the test material, it was stored in a cold storage and taken out at precooled for 24 h (0 d) and refrigerated for 30 d, respectively. Packagings with cool-storage agent were recorded as Microenvironment modified atmosphere packaging (mMAP) + cool-storage agent group, and those without cool-storage agent were recorded as mMAP group as control. The effect of the addition of cold-storage agents on the temperature and the sensory quality, nutritional quality, color and hardness of the grapes in the microenvironmental air conditioning chamber during the simulated logistics process at room temperature (25±1)℃ for 3 d. The grape state under different logistics conditions was scored by principal component score analysis, and then the effects of cold-storage agent on grape during simulated logistics were analyzed through physiological indexes and enzyme activities. The results showed that the temperature in the packagings of mMAP+cool-storage agent group was 1-2 ℃ lower than which of mMAP group. The sensory quality of grape of mMAP+cool-storage agent group was better, the decay rate, threshing rate and browning rate of fruit stalk were lower, and the rate of good fruit was higher, which could be 12.61% higher than that of mMAP group on (30+3)d. The nutrient quality such as soluble solids, titratable acid, VC, and chlorophyll were lost more slowly, the color change was smaller, the hardness was higher, and the principal component score analysis result was mMAP+cool-storage agent group > mMAP group. And after adding cool-storage agent, the relative conductivity was lower, the respiration and ethylene release rate were weaker, the peroxidase activity was higher, and the polyphenol oxidase activity was lower. Therefore, the quality of grape during simulated logistics process can be effectively maintained by adding cold-storage agent, the logistics time after harvest can be extended 3 d at normal temperature and the logistics time after storge 30 d could be extended 2 d at normal temperature.
