Abstract
The work aims to prepare a green and environmentally friendly film material with high antioxidant activi-ty by blending procyanidine with antibacterial properties and antioxidant activity and chitosan for food packaging. Chi-tosan/procyanidine composite films with different mass ratios (mcs∶mpc) were prepared by tape casting method, and their mechanical properties, barrier properties, antibacterial and antioxidant properties were determined. The optimum mass ratio of chitosan to procyanidine was 40∶3 by measuring the thickness, solubility and tensile strength of chitosan-procyanidine film (CS-PC film) with different mass ratios. Compared with the original chitosan film, the swelling degree and solubility of CS-PC film decreased significantly, with a decrease rate of 30.73% and 59.90%, respectively, but the tensile strength increased by 29.94%. With the addition of procyanidine, the antibacterial and antioxidant properties of chitosan films were greatly improved. The antibacterial properties of CS-PC film against Escherichia coli and Aspergillus niger were increased by 53.57% and 28.82%, respectively, but the antibacterial properties of CS-PC films against Staphylococcus aureus were not significantly improved. With the addition of procyanidine, the antioxidant activity of CS-PC was greatly improved, and the higher the amount of procyanidine was, the higher the antioxidant activity of CS-PC film was. When mcs∶mpc=40∶3, the DPPH scavenging rate of CS-PC film reached 82.35%, which was higher than that of CS-control film, increasing by 2.4 times. The SEM results showed that procyanidine micromolecule made the internal structure of chitosan film compact and improved the pore structure. FT-IR analysis showed that the hydrogen bond was the main crosslinking mechanism between procyanidine and chitosan. A kind of food film with high antioxidant activity can be prepared by adding proper amount of procyanidine to chitosan solution, and the film has good antibacterial properties.
