Abstract

The paper aims to explore the research status and application progress of freshness indicator labels in chilled meat packaging, and to provide a theoretical basis for application of freshness indicator packaging. The definition and function of the freshness indicator label are introduced. The fresh meat is classified based on the different characteristic reactants generated during corruption. The working principle of different types of indicator labels is explained. The research status and application of the freshness indicator smart label at home and abroad are explored; and the factors restricting the development of the intelligent indicator label are analyzed. The freshness indicator label represents the development degree of smart label to a certain extent. It is one of the research hotspots and areas for future development of food packaging. However, due to high cost and complex manufacturing process, its domestic level has not yet reached commercial height. It is necessary to further research and develop low-cost, high-precision fresh indicator labels from a technical perspective to promote the commercialization of smart labels.
