摘要

目的 探讨超高压处理对聚合物包装材料包装性能及其可逆性影响的研究现状及未来研究方向。方法 从超高压处理对食品包装材料阻隔性能、 热性能、 结构变化及可逆性能的影响等方面, 综述了超高压杀菌技术的研究现状及进展。结果 对不同超高压处理条件下包装材料的阻隔性能、 热性能、 结构变化的研究结果差别较大, 甚至相互矛盾, 且鲜有人研究这些性能是否可逆。结论 随着超高压处理对包装材料影响研究的不断深入, 关于包装材料性能变化的微观机理研究会越来越深入。

Abstract

This paper studied the current research status and future research directions of the effect of high pressure processing (HPP) on packaging properties and reversibility of food packaging materials. This review illustrated the research status and development of HPP treatment in barrier property, thermal property, structural changes, reversible and other aspects. This review showed that in contrast to the research results on the effect of HPP on food quality, the results on packaging properties and structural changes of the food packaging materials had great differences and even contradictory in related researches, what′ s more, there were few studies on reversibility of packaging properties. With the development of researches on the effects of HPP treatment on packaging materials, there will be more and more deep studies on the reversible mechanism of packaging materials.
