摘要

目的 用高氧气调对双孢蘑菇进行处理, 研究不同 O2体积分数对双孢蘑菇品质的影响。 方法测定双孢蘑菇的感官评价、呼吸强度、硬度、失重率、可溶性固形物、L*值和 PPO 活性等指标。 结果 在温度为 5 ℃、相对湿度为 90%的贮藏条件下, 高氧能较好地维持双孢蘑菇的硬度值、白度值和感官指标; 高氧处理组(O2体积分数为 80%)能抑制双孢蘑菇的呼吸强度和 PPO 活性; 高氧气调包装对双孢蘑菇的失重率和可溶性固形物含量无明显影响。 结论 高氧气调(O2体积分数为 80%)对双孢蘑菇有较好的保鲜效果。

Abstract

Objective Agaricus bisporus was packaged using modified atmosphere with O2 , and the effects of different O2 concentration on the quality of Agaricus bisporus were studied. Methods The sensory properties ,respiration rate, hardness, weight loss rate, soluble solid content, whiteness and polyphenol oxidase (PPO) activity were measured during the storage period. Results Under storage conditions of 5 ℃ and RH 90% , high O2 could better maintain the hardness value ,whiteness value and sensory properties of Agaricus bisporus; treatment with 80% of O2 could inhibit the respiration rate and maintain the PPO activity; packaging with modified atmosphere with O2 had no significant effect on either the weight loss rate of the Agaricus bisporus or the soluble solid content. Conclusion 80% of O2 showed better preservation effect on Agaricus bisporus.
