摘要

介绍了可食性蛋白膜近几年来国内外的研究进展,阐述了可食性蛋白膜的成膜机理、机械性能、阻隔性、光学特性、水溶性、抗菌性等,并提出了可食性蛋白膜未来的发展趋势。

Abstract

The research progress of edible protein films at home and abroad was introduced. The formation mechanism, mechanical properties, barrier properties, optical properties, water solubility, antibacterial of edible protein films was elaborated. The developing trend of edible protein films was put forward.
