摘要

目的 优化超高压微射流(UHPM)技术制备壳聚糖-菊花精油复合膜的工艺条件,并探究该复合膜对鲜石斛微冻贮藏保鲜的效果。方法 通过单因素试验筛选复合膜制备的关键影响因素,以拉伸强度与拉伸断裂率加权综合指标为响应值,采用响应面试验设计优化制备工艺条件;同时分析复合膜对微冻贮藏鲜石斛的菌落总数、质量损失率、总可溶性固形物(TSS)含量、过氧化物酶(POD)活性及感官评价得分的影响。结果 复合膜制备的最优工艺为壳聚糖质量分数2%、菊花精油质量分数0.6%、UHPM压力121 MPa,此条件下综合指标达97.68。该工艺制备的复合膜可有效抑制微冻贮藏石斛的微生物滋生,降低了质量损失率,减少了TSS含量与POD活性的下降,能维持较高的感官评价得分。结论 UHPM技术适用于壳聚糖-菊花精油复合膜的制备,制备的复合膜能有效延缓鲜石斛微冻贮藏过程中的品质劣变,保鲜效果显著。

Abstract

The work aims to optimize the technological conditions for preparing chitosan-chrysanthemum essential oil composite films by ultra-high pressure microjet (UHPM) technology and investigate the preservation effect of the composite films on fresh Dendrobium during micro-freezing storage. The key affecting factors for composite film preparation were screened by single-factor experiments, and the preparation process was optimized via response surface methodology with the weighted comprehensive index of tensile strength and elongation at break as the response value. Meanwhile, the effects of the composite films on the total number of colonies, weight loss rate, total soluble solids (TSS) content, peroxidase (POD) activity and sensory evaluation score of fresh Dendrobium stored under micro-freezing conditions were analyzed. The optimal preparation process parameters of the composite films were as follows: chitosan mass fraction 2%, chrysanthemum essential oil mass fraction 0.6%, and UHPM pressure 121 MPa, under which the comprehensive index reached 97.68. The composite films prepared by this process could effectively inhibit microbial growth of Dendrobium during micro-freezing storage, reduce the weight loss rate, alleviate the decrease in TSS content and POD activity, and maintain a high sensory evaluation score. Therefore, UHPM technology is suitable for the preparation of chitosan-chrysanthemum essential oil composite films, which can effectively delay the quality deterioration of fresh Dendrobium during micro-freezing storage with a remarkable preservation effect.
