摘要

目的 研究肉类新鲜度检测方法在冷链物流中的应用进展,以发展符合市场需求的食品新鲜度检测技术。方法 根据肉类腐败原理,分析冷链物流对食品新鲜度的影响,阐述目前肉类新鲜度检测技术的工作原理,介绍肉类新鲜度检测技术的研究现状。结论 虽然近年来肉类新鲜度检测技术逐渐智能化,提高了检测精度,但依然存在技术检测成本高昂,针对销售环节无法做到有效监控等问题。智能标签作为一种相对成本低廉、加工方便的检测技术具有很大的发展空间。

Abstract

The work aims to study the application progress of meat freshness detection methods in cold chain logistics, and help develop food freshness detection methods to meet the market demand. According to the principle of meat spoilage, the effects of cold chain logistics on the freshness of food were analyzed. The working principle of current meat freshness detection technology was expounded. And the research status of meat freshness detection technology was introduced. In recent years, the detection technology of meat freshness is becoming more intelligent and the detection precision is improved, but there are still some problems such as the high cost of the detection technology and the inability to effectively monitor the sales process. As a relatively low-cost and easy-to-process detection technology, intelligent label has a great room for development
