摘要

目的 介绍卵磷脂的功能特性和开发利用的研究进展,为磷脂及其功能性食品开发提供一定的思路和依据。方法 通过查阅国内外前沿文章对卵磷脂的来源分布、物化性质、功能活性及其机制进行全面概述,总结目前磷脂的应用现状,并对其未来发展前景予以展望。结果 卵磷脂具有降血脂、调节血糖、预防心脑血管疾病等功能,可以缓释药物的递质、机能的维护,同时可作为功能食品的开发、食品包装涂膜的最优选材料。结论 从未来的发展趋势看,卵磷脂这种具有多重功能的天然活性成分必将拥有更加广阔的发展前景,在食品中的应用将更加广泛。

Abstract

The work aims to introduce the functional characteristics of phosphatidylcholine (PC) and the research ad-vances of its development and utilization, so as to provide some ideas and basis for the development of PC and its func-tional food. The source, distribution, physicochemical properties, functional activity and mechanism of PC were overall summarized by looking up cutting-edge articles, the current application status of PC was summed up, and its future de-velopment was prospected. PC had the functions of lowering blood lipid, regulating blood glucose, preventing cardiovas-cular and cerebrovascular diseases, and could slowly release the neurotransmitter and maintain the function of the drug. It could also be used as the best material for the development of functional food and food packaging coating. From the per-spective of the future development trend, PC, a natural active component with multiple functions, will have a broader de-velopment prospect and more extensive application in food.
