摘要

目的 综述海藻酸钙凝胶在可食性包装材料中的研究进展,为进一步扩大凝胶的应用领域提供参考。方法 通过对国内外研究现状和研究成果进行总结,分析海藻酸钙凝胶的形成机理和制备方法,提出海藻酸钙凝胶在可食性包装材料中的未来展望。结果 虽然海藻酸钙凝胶在可食性生物质包装材料、可食性药品包装材料、可食性食品包装材料、可食性固定化包装材料等中的应用较广泛,但也有待进一步深入研究。结论 未来海藻酸钙凝胶在流体食品包装保健品包装,以及生物质包装材料等领域的发展潜力较大。

Abstract

The work aims to summarize the research progress of calcium alginate gel in edible packaging materials, and to provide reference for further expanding the application field of gel. By analyzing the research status and research results at home and abroad, the formation mechanism and preparation method of calcium alginate gel were analyzed. The future prospect of calcium alginate gel in edible packaging materials was proposed. Calcium alginate gel was widely applied in edible biomass packaging materials, edible pharmaceutical packaging materials, edible food packaging materials, and edible fixed packaging materials, but it should be further researched. The calcium alginate gel has great potential in the fields of fluid food packaging and health care packaging as well as biomass packaging materials in the future.
